Ingredients Chicken * 2–2½ lbs thin boneless, skinless chicken breasts * Salt & black pepper, to taste * 1 tsp garlic powder * ½ tsp onion powder * ½ tsp Italian seasoning Apricot Sauce * 1 cup apricot preserves * 2 tbsp Dijon mustard * 2 tbsp balsamic vinegar * 1 tbsp soy sauce * 1 tbsp honey * 2 tsp minced garlic * ¼ cup chicken broth * 1 tbsp butter, cut into small pieces (optional) Vegetables * 2 cups broccoli florets * 1 bunch asparagus, trimmed and cut into thirds * 1 cup cherry tomatoes * Olive oil * Salt & pepper Or use steamable broccoli and asparagus for an even easier option. Directions Preheat oven to 400°F. Place the thin chicken breasts in a greased 9x13-inch baking dish. Season with salt, pepper, garlic powder, onion powder and Italian seasoning on both sides. Whisk together the apricot preserves, Dijon mustard, balsamic vinegar, soy sauce, honey, minced garlic and chicken broth. Pour evenly over the chicken and dot the top with butter. Cover tightly with foil and bake for 15 minutes. Remove from the oven and uncover. Spoon some of the apricot sauce from the bottom of the pan back over the chicken. If using fresh broccoli and asparagus: Lightly steam them first so they’re partially cooked. Add the broccoli and asparagus around the chicken along with the cherry tomatoes. Return to the oven uncovered for about 10 minutes, or until the chicken reaches 165°F and the cherry tomatoes are softened and beginning to burst. If using steamable broccoli and asparagus: Prepare them according to the package directions while the chicken cooks. Add the cherry tomatoes when you uncover the chicken for the final 10 minutes. Add the cooked broccoli and asparagus to the baking dish before serving and spoon the apricot sauce over everything. Depending on the thickness of your chicken, cooking time may vary. Thin chicken breasts generally cook quickly, so start checking the internal temperature around the 20–25 minute mark.
