STEWS of the CARIBBEAN 🌍 Welcome to Caribbean stews, my new series where i’ll be exploring the world of Caribbean stews. I recently got back from this incredible part of the world and It made me realise a few important things, with one of them being how incredible this region is at making stews.. Todays episode takes us to the beautiful Caribbean Island of the Dominican Republic to make a rich, hearty and comforting Sancocho 🇩🇴 Full recipe below, enjoy :) 2 tbsp avacodo oil/beef tallow 1 tbsp brown sugar 300g beef short ribs 250g pork ribs 300g goat meat (bone in) 10 sprigs of fresh thyme 3 tbsp dried oregano 2 tbsp ground cumin 5 tbsp green seasoning 1.5l good quality beef stock 1 green plantain peeled & cubed 1 small corn on the cob, chopped 1/4 a cassava, peeled & cubed 2 small taro 1/4 a small squash, peeled & cubed Salt & black pepper to taste Start by placing the meat in a large bowl, then season generously with salt and place in the fridge overnight for best results or 20 minutes before cooking. Heat up a large stew pot on a medium high heat, then add the oil/fat. Once hot, add the brown sugar and allow to slowly caramelise until it reaches a dark brown but not black colour, otherwise discard and start again. Now pat the meat completely dry, then add to the pot and ensure each side is browned all over. Do this in batches, if the pot isn’t big enough. Once each piece is well browned, cover the pot, reduce the heat to a medium low, then let the meat cook in its own juices for 20 minutes. Remove the lid, add the spices and thyme, then let cook uncovered for a further minute. Now pour in the green seasoning and cook for 5 minutes. Pour in the stock, cover and simmer on a low heat for 1 hour 30 minutes. Remove the lid, add the remaining ingredients, then cook for 30 minutes or until the meats are soft and the vegetables are fully cooked through. Season to taste with salt and pepper, then serve with some white rice, lime & avocado. A perfect dish to keep you warm this winter and great meal prepped. #comfortfood #stew #caribbeanfood #dominicanfood #dominicanrepublic
