Cheesy Mexican Street Corn Dip using the NEW @Mingle Seasoning x @fresh_fodder Spicy Capsicum Dip. Creamy, cheesy and with a little kick. You’ll need: 2 tbsp olive oil 2 cups frozen corn 2 tbsp Mingle Taco Seasoning 1 x 200g Mingle x Fresh Fodder Spicy Capsicum Dip 1 cup sour cream 1½ cups Mexican cheese blend 2 spring onions, finely sliced Juice of 1 lime Mingle Chilli Lime Seasoning Corn chips, to serve Method: Char the corn in olive oil for 8–10 minutes. Add the Taco Seasoning and cook for another minute. Stir through the Spicy Capsicum Dip and sour cream, then add the cheese and stir until melted and creamy. Fold through the spring onion and lime juice, then finish with Chilli Lime Seasoning and extra spring onion. Sprinkle over some extra cheese and pop it in the oven until melted.
