Dirty Red Beans! 🤎 Got this idea from @Symone Verrett and put my own little spin on it! It reminded me of my ground meat stew, so of course I had to add some roux. Easy, filling and definitely going in the rotation! Ingredients * 1 ½ lbs lean ground beef * Britscookin Cajun Seasoning, to taste * 1 onion, diced * 1 bell pepper, diced * 1 Tbsp minced garlic * 2 Tbsp dry roux or jarred roux * 4 cups chicken or beef broth, divided * 1 (27 oz) can Blue Runner Original Creole Cream Style Red Beans * Garlic powder, to taste * Onion powder, to taste * Black pepper, to taste * Worcestershire sauce, to taste * Cooked white rice, for serving * Cornbread, for serving Instructions 1. Brown the meat. Add the ground beef to a large pot or Dutch oven and season with Cajun seasoning. Cook until browned, breaking the meat apart as it cooks. 2. Add the veggies. Add the diced onion and bell pepper to the ground beef. Cook until the vegetables have softened and cooked down a bit. Add the minced garlic and cook just until fragrant. 3. Add the roux. Stir in the dry roux or dark roux, then pour in 2 cups of chicken or beef broth. Stir everything together well. 4. Season & simmer. Season again with Cajun seasoning, garlic powder, onion powder, black pepper, and a splash of Worcestershire sauce. Let everything simmer uncovered until the liquid cooks down and the mixture begins to thicken. 5. Add the red beans. Stir in the can of Blue Runner Red Beans, then add the remaining 2 cups of broth. Mix everything together well. 6. Cook it down. Let the beans simmer uncovered for about 15 minutes, stirring occasionally, until everything is nice and thick. Taste and adjust the seasoning if needed. 7. Serve. Spoon the dirty red beans over hot white rice and serve with cornbread on the side.
