Took us long enough to get started 😂 had SO much fun with this one, every one please give the warmest welcome to my triplet brother Corey AKA Big C’s Kitchen! Spicy Broccoli Rabe & Sausage Orecchiette Serves 6–8 Ingredients 1 lb orecchiette pasta 1 bunch broccoli rabe, trimmed and roughly chopped 5 sweet Italian sausage links 5 spicy Italian sausage links 2 tablespoons extra virgin olive oil ½ teaspoon red pepper flakes, plus more to taste ½ cup finely chopped red and green spicy pickled cherry peppers, I love the Sclafani or Cento brand 1½ cups tomato pasta sauce ½ cup finely grated Pecorino Romano, plus more for serving 2 tablespoons cold butter Kosher salt Freshly cracked black pepper Colorful lunchbox peppers, thinly sliced, for garnish Procedure 1. Brown the sausage: Heat the olive oil in a large skillet over medium-high heat. Add the sweet and spicy Italian sausage links whole and brown well on all sides. Once cooked through, transfer to a cutting board, let rest for a few minutes, then slice into thick rounds. 2. Cook the broccoli rabe: Bring a large pot of heavily salted water to a boil. Add the broccoli rabe and blanch for 2–3 minutes until bright green and just tender. Remove with a slotted spoon and set aside, keeping the water boiling for the pasta. 3. Build the sauce: Return the sausage skillet to medium heat. Add the red pepper flakes and finely chopped red and green pickled cherry peppers — the secret ingredient! Sauté for about 1 minute, scraping up all those browned sausage bits from the bottom of the pan. 4. Bring it together: Add the broccoli rabe, sliced sausage, and pasta sauce to the skillet. Stir everything together and let it simmer over low heat while the pasta cooks. 5. Cook the orecchiette: Add the orecchiette to the same heavily salted water and cook until just shy of al dente. Before draining, reserve about 1 cup of pasta water. 6. Finish the pasta: Add the orecchiette directly to the skillet along with a splash of pasta water. Toss vigorously until the sauce works its way into every little piece of pasta. Add the Pecorino Romano and toss again. 7. The finishing touch: Turn off the heat and add a knob of cold butter, tossing until melted and the sauce is glossy and rich. Add another splash of pasta water as needed. 8. Garnish and serve: Finish with plenty of Pecorino Romano, freshly cracked black pepper, an extra pinch of red pepper flakes, and thinly sliced colorful lunchbox peppers for a fresh, crisp finish. Serve immediately and enjoy! #brothers #triplets #Siblings #comedy #cooking
