This creamy french onion chicken and rice is the perfect one pan meal to make when you’re craving a cozy dinner. made with caramelised onions, juicy chicken, creamy rice and melted cheese. creamy french onion chicken and rice ingredients for the chicken * 4–5 boneless, skinless chicken thighs, about 1½ lbs * 1½ tsp salt * ½ tsp black pepper * 1 tsp garlic powder * 1 tsp onion powder * ½ tsp smoked paprika * 1 tbsp avocado oil, for searing for the rice * 2 medium onions, thinly sliced * 2 tbsp avocado oil * 1 tbsp butter * ½ tsp salt * ½ tsp sugar * 3–4 garlic cloves, minced * 1 tbsp balsamic vinegar * ½ tbsp Worcestershire sauce * 1 cup jasmine rice or long-grain white rice, rinsed and drained * 2 cups chicken bone broth, chicken broth, or beef broth * ½ cup heavy cream * 1½ tsp fresh thyme leaves finishing * 1 cup freshly shredded gruyère or gouda cheese * Crispy shallots or onions * Fresh thyme, optional Directions 1. Season chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Heat 1 tbsp avocado oil in a large skillet and sear chicken for 3–4 minutes per side. Remove and set aside. 2. Add 2 tbsp avocado oil and butter. Add onions, salt, and sugar. Cook over medium-low heat for 15–20 minutes, stirring occasionally, until caramelized. 3. Stir in balsamic vinegar and Worcestershire. Add garlic and thyme and cook for 30 seconds. 4. Pour in broth and heavy cream. Add rice and stir. Bring to a simmer. 5. Return chicken to the skillet. Cover and cook on low for 18–20 minutes, until the rice is tender and chicken reaches 165°F. 6. Remove from heat and sprinkle with gruyère or gouda and cover for 2–3 minutes until melted. 7.
