Very easy one pan dish! Just a little cutting and you’re good. Yummy cozy and healthy! Ingredients * 1 14oz package pumpkin gnocchi * 1 12oz package chicken sausage, sliced into rounds (I used chicken apple, but any flavor works) * ½–1 red onion, thinly sliced from root to stem * 1½ cups cooked lentils * 1–2 bunches lacinato kale, stems removed and leaves thinly sliced * Olive oil * Seasoned butter, optional (I used Trader Joe’s butter with Parmesan garlic and herb) * Caramelized onion goat cheese, ½–1 log, sliced * Salt and pepper, to taste Instructions 1. Preheat the oven to 400°F. 2. Start with the gnocchi, sausage, and onion. Add the pumpkin gnocchi, sliced chicken sausage, and red onion slices to a large sheet pan. Feel free to add other veggies you have on hand like cauliflower or squash. Drizzle generously with olive oil and toss everything together until well coated. Spread into an even layer and roast for 10 minutes. 3. Add the vegetables and lentils. Remove the sheet pan from the oven and add the cooked lentils and chopped kale. If using seasoned butter, add a few spoonfuls throughout the pan. Otherwise, drizzle with a little more olive oil and season with salt and pepper. Toss everything directly on the sheet pan, then spread it back out into an even layer. Arrange slices of caramelized onion goat cheese over the top. Use anywhere from ½ to 1 full log, depending on how cheesy you want it. 4. Finish roasting. Return the sheet pan to the oven and roast for another 15–20 minutes, or until the gnocchi is cooked to your liking, the sausage is heated through, the kale is tender, and the goat cheese is soft and slightly golden.
