HILLSTONE KALE SALAD DUPE!!! salad: 2 bunches curly green kale 2 cups green cabbage (1 small cabbage or 1/2 a large one) 1 cup savoy or napa cabbage 1/2 cup chopped cilantro (about 1 large bunch) 1/4 cup chopped mint (about 1 .75 oz box) 4 green onions (both white and green parts) 1/2 cup roasted & salted peanuts 1 cup freshly grated parmesan cheese optional: rotisserie chicken for protein! sesame peanut dressing 1/2 cup olive oil 1/2 cup toasted sesame oil Juice of 2 limes 4 tbsp rice vinegar 2 tbsp creamy peanut butter 2 tbsp pure maple syrup 2 tsp dijon mustard 1/2 tsp salt Pinch of black pepper Directions: 1. If you are using a rotisserie chicken for the protein - it’s so much easier to shred while it’s still warm! Shred chicken first and then set aside until you’re ready to serve. 2. Next prep the dressing. Add all of the dressing ingredients to a bowl, whisk together until smooth, and then set aside until you’re ready to dress the salad. If you taste the dressing on it’s own it will be super tangy which is good - you want the dressing to have enough flavor on it’s own to cut through all the kale, cabbage, etc!! 3. Next - Wash and prep all of your salad ingredients. Chop the kale + cabbage + herbs super fine and add to a large serving bowl. Crush up the roasted peanuts and then add to the bowl with lots of freshly grated parmesan cheese. At this time add in the rotisserie chicken + about half of the dressing and then taste to see if you need more before adding all of the dressing right away. Serve salad with extra parmesan, a little drizzle of additional dressing, and fresh cracked pepper on top! ENJOYYY! **If you’re making this for lunches - store dressing separate and add to individual servings for optimal taste & texture! #hillstonerestaraunt #kale #healthy #lunch #fyp
