So we just out here frying chicken naked now? No clothes, no flour, no cornstarch, because apparently we're putting it straight in the grease. I kept seeing this trend, so baby, I had to find out if y'all discovered a new way to fry chicken or if we just out here doing stuff. Since we're not coating the chicken, you definitely want a good binder. Y'all already know mine: mustard and hot sauce. And season that chicken. Normally I season my flour too, but we ain't got no flour today. So all that flavor needs to go right here. I'm using chicken rub, complete seasoning, sazón, garlic powder, onion powder, and smoked paprika. And y'all know my rule: if you can't see that seasoning, go add some more. Get your oil to 350, and here's the crazy part: add about a third of a cup of cornstarch straight into the oil and stir it until it's smooth with no lumps. Then in goes our naked chicken. I did about five to six wings at a time and fried mine eight to ten minutes until they were crispy and fully cooked. Pull them out and let them drain on a wire rack. Now look, I'm not going to lie, the chicken did get crispy, and when I broke that wing open, it was juicy too. But would I replace this with my regular fried chicken? Mmm, nah.
