🌵 NOPAL + SPINACH TORTILLAS | TORTILLAS DE NOPAL Y ESPINACA An easy and delicious way to add a little more fiber and greens to your meals. 🌿 These homemade tortillas come out soft, flexible, and so good! INGREDIENTS | INGREDIENTES • 2 cups yellow nixtamalized corn flour — 2 tazas de harina de maíz amarillo nixtamalizado • 1 nopal, cleaned and chopped — 1 nopal limpio y cortado • 1 cup spinach — 1 taza de espinaca • Small handful of cilantro (optional) — Un poquito de cilantro (opcional) • 1¼ cups warm water, divided — 1¼ tazas de agua tibia, dividida • Pinch of salt — Pizca de sal Blend the nopal, spinach, and cilantro with 1 cup of warm water until smooth. Add the mixture to the corn flour with a pinch of salt and mix. If the dough feels too firm, gradually add the remaining ¼ cup of warm water until you have a soft, pliable dough. Knead for about 5 minutes, form small balls, and press them using a tortilla press. Heat your comal over medium heat. Cook each tortilla for about 15 seconds, flip and cook for another 20 seconds, then flip once more and let it finish cooking and puff up. 🫓 ✨ Makes approximately 19 tortillas. Store covered in the refrigerator for up to 3 days… although they’re so good, I don’t think they’ll last that long. 😂🤎 SAVE this recipe for later! 🌵 #TortillasDeNopal #NopalTortillas #HomemadeTortillas #MexicanRecipes #RecetasMexicanas
