(crockpot) RED BEANS AND RICE - part 1 of my series, Dinners that stretch. The series for anyone that doesn't want to cook every day and I don't think you should have to. I love making a meal at the beginning of each week that lasts a few days because it takes so much pressure from cooking/meal planning and one of my favorite stretch meals has to be red beans and rice. I'm cooking them in the crock pot because its cozy season, why not? SHOPPING LIST red kidney beans sausage, I prefer Andouille or Conecuh smoked meat of choice bell pepper celery onion garlic Seasonings: garlic powder, onion powder, Cajun seasoning, Italian seasoning, oregano, bay leaf, paprika, cayenne, chicken bouillon, black pepper optional garnish: green onion, hot sauce First things first, I washed the beans, and you should too. I just washed the bag and put them back in so you can see the brand. did not soak overnight, but you can if you have the foresight. - If you don't use smoked meat, you may also need to add salt. - To make your beans creamy, put the flour DOWN. All you need is to smash a few spoonfuls of the beans when they are tender. I usually do it right on the spoon to limit extra dishes. We love a pot of red beans over here and these are no exception! So good creamy and cozy but most importantly they will feed us for days!
