Replying to @Lily♋️ Brown Stew Chicken This was too good… Are you picking this or oxtail? 🤔 Ingredients 1-1.5kg chicken (thighs/drumsticks) 1 onion 2 spring onions 1 bell pepper (half of red and green) 1.5 scotch bonnet (half of one to add to the marinade) 3-5 cloves garlic 4cm ginger piece - same as garlic 4-5 sprigs thyme 2 bay leaves 1/2 tbsp salt 1/2 tbsp black pepper 1/2 tbsp all-purpose 1/2 tbsp onion powder 1/2 tbsp garlic powder 1/2 tbsp all-spice powder (or pimento seeds) 1-2 tbsp browning 2 tbsp green seasoning Oil 1-2 tbsp brown sugar 600-800ml water (to cover the chicken) 2 tbsp ketchup Recipe 1. Thoroughly clean the chicken with lemon and vinegar 2. Prepare the vegetables by dicing the onions and peppers, chopping the spring onions and the scotch bonnet and mincing some garlic and ginger 3. In a bowl, begin seasoning the chicken with salt, pepper, all purpose, onion powder, garlic powder, all-spice, either brown sugar or browning along with the green seasoning 4. Introduce all of the vegetables to the bowl along with some fresh thyme and combine well with the chicken 5. Leave to marinate 1 hour but ideally up to 6 hours or overnight 6. In a large pot, add some oil along with some brown sugar until it becomes liquid/caramelised 7. Add the chicken to the pot to brown them for 10-15 mins or until well browned. Do this in batches 8. Put all of the chicken in the pot along with the vegetables it was marinating with and stir for 5 minutes or so 9. Pour hot water into the pot until the chicken is completely covered and allow to simmer for 45 mins - 1 hour 10. Add a few bay leaves and a whole scotch bonnet while simmering 11. After 35-40 minutes, add some ketchup, stirring well to combine 12. Leave to simmer for another 15 minutes until the stew is thick enough 13. Serve with some rice and optionally some plantain and coleslaw 14. Enjoy! #brownstewchicken #riceandpeas #stewchicken #jamaicanfood #tasty
