Let's make a Jamaican oxtail lasagna. Oxtail marinade: * 5 lb oxtail * 1/3 cup green seasoning (*see below) * 1 red and 1 green bell pepper, diced * 6 garlic cloves, minced * 1 onion, diced * 2 scallions, chopped * 2 tsp black pepper * 1 tsp ground ginger * 2 tsp smoked paprika * 1 tbs allspice * 2 tbs garlic powder * 3 tbs soy sauce * 2 tbs Worcestershire * 1-2 tbs browning sauce * 2 tbs ketchup * Salt to taste (keep in mind salt content of broth you can always add more) Green seasoning: * 1/2 bunch cilantr Start by cleaning your oxtails with vinegar and lime water and pat them super dry. For the green seasoning you can use store-bought or make your own by blending together fresh herbs, lime, aromatics and scotch bonnet. Pour that over your oxtails with soy sauce, browning sauce, a bunch of spices, red and green bell peppers, onions and garlic. Mix that well and let marinate overnight. *caramelize brown sugar first!!! I forgot to show this, but make sure you caramelize 2 tablespoons of brown sugar before searing your oxtails. Once the oxtails are deeply browned, add back in the marinade with stock, aromatics and let that simmer for a few hours. While that's cooking, make your ricotta filling. I'll set that aside. After a few hours, the oxtails should be tender and falling off the bone. Once it's fall-off-the-bone tender, shred up all of the meat. For our sauce component, we'll make a simple béchamel and then strain the oxtail gravy and reduce it until glossy and thick. Then fry up some plantains for later. Finally, to assemble the lasagna, spread a thin layer of gravy and béchamel on the bottom and layer it however you want. I'll be adding gravy between the layers, but I recommend it on the bottom so that the lasagna sets up more firmly. Finish with more cheese and plantains. Bake it until golden and bubbly. Serve it over a spoonful of oxtail gravy and enjoy.
