Trying new things in my 40s means saying yes to recipes that immediately make it onto the "we're making this again" list. 🌮✨ Huge thank you to @iramsfoodstory for the recipe inspiration! It was SO good. The only change I made was using green bell pepper instead of a mix of bell peppers because that's what I had on hand. Everything else stayed true to her recipe, and I added a side of fresh pico de gallo because I love that little pop of freshness. 📝 Ingredients Chicken Filling
• 1 lb boneless chicken breast, cut into small pieces
• Salt, to taste
• 1 tbsp smoked paprika
• 1 tsp garlic powder
• ½ tsp black pepper
• 1 tsp Cajun seasoning
• 1–2 cloves garlic, minced
• 1 cup diced bell peppers (I used all green peppers)
• ½ cup cooked corn
• 1 diced yellow onion
• 1 seeded jalapeño (optional)
• 1 tbsp lemon juice
• 4 tbsp cream cheese
• ¼ cup water
• 1 tbsp oil Sauce
• ½ cup mayonnaise
• ½ cup sour cream
• 1 tbsp smoked paprika
• 1 tsp garlic powder
• Salt & pepper to taste
• 1 tsp Cajun seasoning
• 1 tbsp lime juice
• 1 tsp hot sauce
• 1–2 tbsp chopped cilantro To Assemble
• 1 cup shredded cheese (I used mozzarella & cheddar)
• 10 mini flour tortillas
• 2 tbsp oil (for brushing tortillas) 👩🏾🍳 Directions 1. Season the chicken with salt, smoked paprika, garlic powder, black pepper, Cajun seasoning, and oil. 2. Cook the chicken in a lightly oiled skillet for 3–4 minutes. Add the garlic and cook for another 1–2 minutes. 3. Stir in the onion, bell peppers, corn, and jalapeño. Cook until the vegetables soften and the chicken is fully cooked. 4. Reduce the heat and stir in the cream cheese, lemon juice, and water until creamy. Simmer for 1–2 minutes if needed to thicken. 5. Preheat your oven to 400°F. 6. Brush one side of each tortilla with oil. Flip them over, fill with the chicken mixture, top with shredded cheese, fold closed, and place on a baking sheet. 7. Bake for 10–15 minutes, until the tortillas are golden and crispy and the cheese is perfectly melted.
