CALIFORNIA AVOCADO SUSHI WAFFLES If you love crispy rice sushi, then you’ll love this fun twist on a waffle. Cooked rice is fried in a waffle machine then topped with cucumbers, fresh and ripe @California Avocados, and spicy tuna. They’re finished with gochujang mayo sauce and chili crisp for the most flavorful bite ever. To ensure you’re enjoying locally grown California Avocados, look for California on the label. #ad Rice 3 cups cooked short grain rice 2 Tbsp rice vinegar 1 1/2 tsp sugar 1/4 tsp salt Avocado oil spray Spicy Tuna 12 oz tuna, sushi-grade, diced into 1/2-inch cubes 3 Tbsp mayo 1 1/2 Tbsp soy sauce 1 1/2 Tbsp sriracha 1 tsp sesame oil 1 Tbsp lime juice 1 Tbsp chopped green onion Pinch of salt Spicy Gochujang Mayo 1/2 cup mayo 2 Tbsp rice vinegar 2 Tbsp sriracha 1 tsp gochujang 1 1/2 tsp sugar Pinch of salt Toppings 2 ripe, Fresh California Avocados, peeled, seeded and thinly sliced 1 Persian cucumber, thinly sliced Sesame seeds Eel sauce 1. In a bowl, combine the cooked short grain rice, rice vinegar, sugar and salt. Mix well and let the rice cool to room temperature. 2. In another bowl, combine the diced sushi-grade tuna, mayo, soy sauce, sriracha, sesame oil, lime juice, chopped green onion and salt until evenly mixed. Cover and refrigerate until ready to use. 3. In a separate bowl, whisk together the mayo, rice vinegar, sriracha, sugar and salt until smooth to make the spicy mayo. 4. Preheat a small waffle maker and spray with avocado oil. Add enough seasoned rice to fill the waffle maker evenly, then spray the rice with more avocado oil. Cook for a few minutes until the rice is golden brown and lightly crispy. Carefully remove and repeat with the remaining rice. 5. Top each sushi waffle with sliced California avocado, Persian cucumber, and 1-2 Tbsp of the spicy tuna mixture. Garnish with sesame seeds, then drizzle with spicy mayo and eel sauce. Serve immediately. #CaliforniaAvocados #sushiwaffles
