Budget Seafood Boil 🦞🦐🌽 This is how my friends and I split up the cost of groceries to cook fun meals together! Ingredients for the boil: *2–3 lb seafood *Mini potatoes *Corn *Sausage Sauce Ingredients: * ¼ cup (57 g) unsalted butter * 10–12 cloves garlic, finely minced * 1 small shallot, finely minced (optional) * SEASONINGS: Add whatever seasonings you like (Old Bay, paprika, cayenne, onion powder, garlic powder, black pepper…etc.) * 2 tbsp Lao Gan Ma Chili Crisp * 2 tbsp soy sauce * 1 tbsp sesame oil for extra aroma * 1–2 tbsp brown sugar (adjust to your sweetness preference) * Juice of ½ lemon * Minced parsley (optional for finish) **Note: To loosen the sauce, you can add ½–¾ cup seafood boil cooking liquid (preferred) or low-sodium chicken stock Method 1. Bring a large pot of water to a boil and season generously with salt. Squeeze in a lime or lemon, then throw the whole citrus (juice and peels) into the pot to infuse the water. 2. Boil each type of seafood individually according to its size and cooking time (for example, shrimp cook much faster than lobster). Remove each as soon as it’s cooked and set aside. 3. Cook the potatoes, corn, and sausage until tender, then reserve ½–¾ cup of the cooking liquid before draining. 4. Melt the butter with the oil over medium heat. 5. Sauté the shallot for 2–3 minutes, if using. 6. Add the garlic and cook for about 30 seconds until fragrant. 7. Stir in your seasonings and cook for another 30 seconds to bloom them. 8. Add the Lao Gan Ma, soy sauce, and brown sugar. 9. Pour in the reserved cooking liquid or stock and simmer for 2–3 minutes. 10. Remove from the heat and stir in the lemon juice. 11. Toss with 2–3 lb of seafood (lobster, shrimp, clams) plus filling ingredients like potatoes, corn, and sausage until everything is evenly coated.
