Do we all actually like bubblegum for the taste or do we just like it because it's blue? Swear to god, as a kid, I used to beg for this flavor just for the fact that it was blue. And then my mum would be like, 'I'd literally have one taste of it and be like, I don't like it.' And this is like the third time now that I've redone the shape. And I'm just a perfectionist, like I want it to be perfect. So here I am, smoothing it out again. And this is the good thing about gelato is you can literally reshape it, remold it until you get it exactly as you want it. Apart from the fact that it is melting and you are on a little bit of a time crunch, but it's fine. Because it all works out in the end. When we do make a flavor like bubblegum that is super popular, we can make a few pans at a time. So today I'm making three small pans, making sure to scrape it all out and then we're going to rinse it before we put the next flavor in. And of course, before anyone asks, nuts are done at the end.
