Ingredients • 220 g cottage cheese (1 cup) • 30 ml unsweetened almond milk (2 tbsp) • 15 ml honey or maple syrup (1 tbsp) • 30 g pistachio butter or finely ground pistachios (2 tbsp) • 2 ml vanilla extract (½ tsp) • Optional: 10 g crushed pistachios (1 tbsp) Preparation 1. Blend the cottage cheese, almond milk, honey or maple syrup, pistachio butter and vanilla until completely smooth. 2. Stir in the crushed pistachios, if using. 3. Transfer to a freezer-safe container and freeze for 2–3 hours, stirring once halfway through. 4. Let it rest at room temperature for 3–5 minutes before scooping.
