Chocolate Banana Brownies Ingredients * 4 very ripe bananas (about 350 g / 12 oz flesh) * 250 g (1 cup) low-fat cottage cheese * 3 large eggs * 30 g (⅓ cup) unsweetened cocoa powder * 30 ml (2 tbsp) maple syrup or honey * 2 tsp baking powder * ¼ tsp fine sea salt * Optional topping: Fine shredded coconut Preparation 1. Preheat the oven to 180°C / 350°F. Line an 8 × 4 inch (20 × 10 cm) loaf pan with brown parchment paper. 2. Add the bananas, cottage cheese, eggs, maple syrup, cocoa powder, baking powder, and salt to a bowl. 3. Blend until completely smooth using an immersion blender or blender. 4. Pour the batter into the prepared pan and smooth the surface. 5. Bake for 40–45 minutes, until the edges are set and the centre has a slight wobble. 6.
