Date & Chia Chocolate Mousse .. Ingredients (serves 3) * 400 g plain 0% Greek yogurt * 150 ml skimmed milk * 80 g Medjool dates, pitted (about 5) * 30 g unsweetened cocoa powder * 30 g chia seeds * 1 tsp vanilla extract * ¼ tsp salt * Fresh raspberries, to serve Preparation 1. Blend the dates with the milk for 1 minute until completely smooth — dates break down better in liquid alone. 2. Add the yogurt, cocoa, chia, vanilla and salt. Blend 2–3 minutes until silky and no seeds remain. 3. Divide between glasses straight away — blended chia begins to thicken within minutes. 4. Chill 45–60 minutes until set. 5. Top with raspberries.
