One of the smallest habits in a pastry kitchen is also one of my favorites. After washing my silicone molds, I pop them into a warm oven for a few minutes instead of waiting for them to air dry. They dry faster, they’re ready to put away, and I don’t have to leave trays of molds sitting all over my kitchen. It’s not a fancy trick.
