Light brown sugar and dark brown sugar are not interchangeable if you’re trying to control the final cookie. The biggest difference is the amount of molasses. Light brown sugar has less molasses, giving cookies a lighter caramel flavor and a balanced texture. Dark brown sugar contains more molasses, which adds a deeper caramel flavor, more moisture, and can make cookies softer and chewier. Neither one is “better.” If you want a classic chocolate chip cookie, light brown sugar is usually the better choice. If you want a richer flavor and an even softer, chewier cookie, reach for dark brown sugar. The best ingredient is the one that creates the cookie you’re trying to bake. 💜 Love baking and pastry tips, tricks and recipes? You’re in the right place!
