I am on a mission to learn how to make a dish from every country in the world! Today I learn Chamorro food from the Northern Mariana Islands from the incredible @Netty Cee 🙏 Chicken Kelaguen & Titiyas -4 boneless skinless chicken thighs (boiled or grilled) -2 stalks of green onion -1 large onion diced -3 large lemons -2 large spoonfuls of ground peppers (or fresh) -1 tbsp msg -2 tsp lemon powder (optional) -1.25 C corn meal (PAN flour) -1 tbsp oil -½ Cup warm water (approx) -Boil or grill your chicken thighs -Dice your green onions & brown onion -Chop chicken into bite sized pieces or shred. Place in a large bowl and squeeze the juice of 3 large lemons into the chicken -Add ground peppers, msg & season with salt -Taste and adjust seasoning as desired. It may need more lemon juice at this point or you can add the optional lemon powder now. Set aside the chicken kelaguen until it’s time to serve. -To make the titiyas add corn meal (PAN flour) to a large bowl, add the cooking oil and about ½ C of flour -Mix with your hands to make a rough dough that should be quite wet and playdough like in consistency. Knead for 2 minutes to bring it together -Roll into balls and prepare your tortilla press -Place a piece of baking paper onto tortilla press before placing a ball on top and another sheet of baking paper on top, close the press and remove the titya. Repeat with all dough balls -On a medium heat non stick fry pan, fry the titiyas for about a minute on each side -Serve chicken kelaguen inside your tityas #Chamorro #Guam #CNMI #Saipan
