Korean seaweed soup, but make it a freezer-friendly one-pot meal 🍚✨ This 미역국 솥밥 (Korean seaweed one-pot rice) is inspired by my toddler’s favorite safe food: Miyeokguk (Korean Seaweed Soup). It has all the cozy flavors of Korean seaweed soup and rice—just without the broth. Perfect for easy toddler meals, busy weeknight dinners, freezer meal prep, travel days, and my future postpartum freezer stash. Freeze into individual blocks, then microwave whenever you need a simple, comforting meal. **미역국 솥밥 / Korean Seaweed Soup Rice** Ingredients: - ½ tbsp sesame oil - ½ tbsp olive oil - 1 lb ground beef - 1½–2 cups rehydrated seaweed - 1 tbsp fish sauce - 2 tbsp soup soy sauce (or light soy sauce) - 2 tbsp minced garlic - 1 cup rinsed rice - 1 cup water Directions: 1. Heat sesame oil and olive oil, then brown the ground beef. 2. Add rehydrated seaweed, fish sauce, soup soy sauce, and minced garlic. 3. Stir in rinsed rice and water. 4. Cover and cook on medium-low for 10–15 minutes, checking until the rice is tender. 5. Enjoy right away, or portion and freeze for easy microwave meals.
