Let me show you how to make this chicken pot pie for dinner. We're going to start by sautéing one onion with lots of butter. Don't burn the onions, just make sure you cook them until they're translucent. I cooked my own chicken. I'm just using one that's a rotisserie. It's easier just break it apart. This is the chicken pulled apart. I'm adding in some garlic with the onion about three large cloves. Don't burn the garlic. Give that a good mix. In the same pan, I'm going to make a roux, which is equal parts butter and flour. It just helps to thicken up the sauce. Longer you stir, the longer you have this on the pot, the nuttier the roux becomes. I added in the flour and I'm adding in a little bit more butter and then a little bit more flour. Once you got the roux to a good place, you're going to add in heavy cream. Make sure the roux and the heavy cream is really well combined and becomes nice and thick. I added in the entire carton of the heavy cream and I added a little bit of water. Look at this consistency. It is perfection. I don't forget this is always on low heat. Now we're adding in salt, pepper, lots of black pepper. I love using herbs, so I'm adding in some dill. You don't have to add this if you don't want to. I pre-chopped and frozen my dill because I buy a lot and I don't want it to go bad. Now we're going to add in all our vegetables and our proteins. I told you I'm making this as easy as possible. I'm adding in these frozen vegetables. This is a mixture of carrots, corn and peas. I don't like to put potatoes in my chicken pot pie just because the meal is already so heavy with the heavy cream and the biscuits. I'm going to add all of that in. Add the onions. Add in the shredded chicken. I love using rotisserie chicken because one, it cuts down my cooking time and two, I always feel like when chicken is just like too chickeny, I call it gamey, and people in the comments said gamey, but you guys know what I mean. When chicken is just like too chickeny, I feel like it has that taste. I'm going to put this in the oven at 350 until the biscuits are cooked. Chicken pot pie is done and looks incredible. They eat biscuits are individual, but what I'm going to do is I'm just going to stretch them out a little bit like this. You can help me lay them on top. I usually layer it like this and for this one, I take the other one and I cut them in half and then I just put this in half so that way it fills in the center pieces. I'm popping this in the oven at 350 until the biscuits are cooked. Chicken pot pie is done and looks incredible.
