Let me show you guys how to make a 5 ingredient all from Trader Joe’s cozy fall dinner. And in my eyes, it’s really not that bad for you because we have veggies, we have protein, we have carbs, we have fat, we have all the things, and it’s a home cooked meal. Starting with some rotisserie chicken. Obviously you can buy one and pick it your own or make shredded chicken, whatever, but I was at Trader Joe’s and this looks super easy. Unexpected broccoli cheddar soup. Also, you can use any brand, not Trader Joe’s brand, but again, Trader Joe’s inspired. Mirepoix, I think that’s how you pronounce it. Also can do this on your own, but carrots, onions, and celery already chopped up finely. This saves you so much time if you want to do it, do it on your own. Some green peas. This adds protein and fiber and I wanted to bump up the veggie aspect. Some of these organic crescent rolls. You can also use the biscuits or any like puff pastry kind of vibe. First step is that I preheated my oven to 400 and now we’re going to go on the stove and do the pre-work. Like I said, the oven’s preheating, so I got my cast iron with an olive oil base. You can do butter as well and then I put the veggies in and I’m going to let just the mirepoix sauté. Though the soup is seasoned, I went in with some thyme, garlic powder, onion powder and sage just to give that chicken pot pie flavor. And then I added some garlic just to emphasize all the flavors. The carrots and celery were tender and the onions are translucent, that’s how you know they’re pretty much ready. So I put the frozen peas in because they do not need that much time. I always keep chicken broth on hand. This one’s from Sprouts, but Trader Joe’s is a great one and I just splashed that in there because it adds nutrients and flavor and also helps things cook thoroughly. I just added the chicken, so I’m going to stir that up and let it sauté a bit. Like this, so we’re just going to let it all heat up for a I put the stove to low and then I added the soup in, so I’m going to mix it and just let it simmer before we move on to the next step. Looking like this, I just did a little taste test and it is so good, so we’re going to wait to see that a little bit more, that bubbling. And then we’ll put the pastries on. Just layered the pastry on top. I’m not going to lie, I didn’t love this, I would probably do biscuits next time because I had to really tetris it and that took longer than expected, so do biscuits. 400 for 20 to 25 minutes. Just pulled it out of the oven and oh my gosh guys, your whole house will smell so good. So crispy. This is what it looks like, so good. I’m going to taste test it for you guys, it looks so good. Make this so, so good.
