If somebody show up at your house and all you have is tuna and pasta, don't panic. We can make something good with that. Welcome to episode 1 of my Tuna Recipe Series and today we're making Creamy Coconut Curry Tuna Pasta. And listen, this took me less than 10 minutes. First, get your pasta water going. I'm using the shell pasta because that's what I had, but use whatever pasta you have. While that cooks, grab your seasoning. And you know how it go. When the kitchen running dry, we're using what we have. I had some sweet pepper, onion, garlic, and of course, Scotch bonnet pepper because me personally, the Scotch bonnet pepper can leave out. My part got a little too hot. So if you still the butter looking dark, mind your business. Add about a teaspoon of curry. You don't need a lot. Just enough to bring that curry flavor through. Add your seasoning. Let everything sauté together, then go in with your coconut milk. And let that simmer down. Add a little pasta water because we need enough sauce to coat all the pasta. Then add some spinach. And let me tell you from now, add more spinach if you have it. Definitely wish I had more. Once that cooks down a little, add your tuna. Then it goes the pasta. Mix everything together. And if the sauce gets too thick, add some more pasta water until everything is creamy and nicely coated. And because we just can't leave it so, add a little parmesan on the top for a little razzle-dazzle. Look at that. And that is dinner. Less than 10 minutes.
