On the menu tonight is my take on the NYT Crispy Gnocchi with Sausage & Broccoli Pillowy gnocchi that’s crispy on the outside, golden-roasted broccoli with savory sausage and blistered cherry tomatoes with lots of parm to tie it all together…this one deserves a spot in the Pajama Pasta rotation! And she’s a one pan meal! First onto our parchment lined sheet pan, we're gonna go in with one head of broccoli chopped, should be about a pound. Then about a pound of shelf stable gnocchi. Separate them out. The recipe doesn't call for it, but I add in about a cup of cherry tomatoes. As it roasts in a hot oven, they blister and collapse into the olive oil and rendered sausage fat and then makes this rich, jammy pan sauce. And I find that adds so much more to the flavor of the dish. Then we add in about a quarter cup of olive oil. And two cloves of grated garlic. We'll season with some salt. This is also where you would add in some crushed red pepper if you like the heat. But I'm holding off. And I've got about a pound of Italian sausage. I'm using mild. The casings are removed. This is now ready to go into a preheated 400 degree Fahrenheit oven for about 20 to 25 minutes until everything gets golden and crisp. I'm also gonna check in about halfway through. Be right back. Gorgeous. So easy. We'll finish with some lemon juice. Some freshly grated parm. And I'll toss to get the cheese melted. And I love how the cherry tomatoes coat everything to make it a bit saucier.
