I've been coming over about 30 minutes for an impromptu happy hour at home and I happen to have this gorgeous focaccia I just picked up from our local Italian market. So I thought I'd be the perfect time to make my hot honey and ricotta focaccia. Let's make it. We'll start by coating the bread with a little drizzle of olive oil. Give it a nice brush. Then we'll lay down some slices of provolone. Then I've got some fresh mozzarella that I've patch dry. We're just gonna tear it on top. So provolone is lower in moisture than mozzarella, so it's gonna serve as a sort of barrier between the high moisture mozzarella and the bread, so it doesn't get soggy. I almost forgot to pay the cheese tax. Goldie says hi friends. Birdie wanted to say hi too. Okay, I gotta wash my hands, be right back. And now we're gonna go with little dollops of Calabrian chili. If the heat isn't for you, you can always leave it out. Then I've crisped up some sweet Italian sausage. You can keep this vegetarian without the sausage, of course. Let me show you what she looks like. This is not gonna go into 425 oven just long enough for everything to get melty and gooey. And Sicily. I'll be right back. And then we have our whipped ricotta. I'm just gonna give it a quick whip to get it nice and fluffy. Like so. A moment for our focaccia. I let this sit on a wire cooling rack for about two minutes, just to let the steam vent and lock in that bottom crunch. Now our finishing touches. We're gonna grate some parm. Our house smells like a pizzeria right now. Perfect for my friends to walk into. Our whipped ricotta. And then we're gonna do some little dollops. Our hot honey. And then I have this pizza oil from Brightland. So we're gonna do a little drizzle because why not? I can really smell the oregano. Perfect. And we'll finish with a little bit of flaky salt.
