Shrimp veggie pasta🍤🍝 Ingredients * 10 oz Barilla Protein+ Penne * 1 lb large shrimp, peeled & deveined * 1/2 large zucchini, diced * 1 pint cherry tomatoes * 3 garlic cloves, minced * 1 tbsp olive oil * ½ cup grated Parmesan * Juice of ½ lemon Shrimp Seasoning * 1 tsp garlic powder * 1 tsp Italian seasoning * Salt & pepper * ½ tsp paprika (optional) Directions 1. Bring a large pot of salted water to a boil and cook the pasta until al dente. 2. Season the shrimp with the garlic powder, Italian seasoning, salt, pepper, and paprika. 3. Heat the olive oil in a large skillet over medium-high heat. Cook the shrimp for 1–2 minutes per side until pink. Remove and set aside. 4. In the same skillet, add the zucchini and cook for 4–5 minutes. 5. Add the cherry tomatoes and cook for another 3–4 minutes, until they begin to burst. 6. Stir in the garlic and cook for 30 seconds. 7. Add the cooked pasta, Parmesan, lemon juice 8. Return the shrimp to the skillet and toss for about 1 minute until warmed through. 9. Serve with extra Parmesan if you like.
