My kids were absolutely feral while I was making this, so I didn’t follow the recipe exactly. 😅 I forgot to add the flour (which would have made it more creamy) and eyeballed all my measurements! It was still very good, but the written recipe below is correct! (Recipe from: goldengracekitchen.com) Ingredients For the Shrimp * 1 pound extra-large shrimp, peeled and deveined * ½ tablespoon smoked paprika * ¾ tablespoon Italian seasoning * ¼ teaspoon black pepper * ¾ teaspoon salt * 1½ tablespoons oil from the sun-dried tomato jar For the Sauce * 2½ tablespoons tomato paste * ½ cup sun-dried tomatoes, diced * 1 tablespoon Italian seasoning * ½ teaspoon smoked paprika * ½ teaspoon salt * ¾ teaspoon dried basil * 2 tablespoons all-purpose flour * 2 cups fresh spinach, chopped * 2 tablespoons butter * 2 tablespoons minced onion * 2 tablespoons minced garlic * 2 cups vegetable broth * 1 cup heavy cream * 1 cup freshly grated Parmesan cheese * Fresh basil, chopped, for garnish For the Pasta * 12 ounces pasta Instructions 1. Bring a large pot of generously salted water to a boil. Cook the pasta according to the package directions until al dente. Reserve ½ cup of the pasta water, then drain and set aside. 2. In a bowl, toss the shrimp with the smoked paprika, Italian seasoning, black pepper, and salt until evenly coated. 3. Heat a large skillet over medium-high heat. Add the oil from the sun-dried tomato jar. Cook the shrimp for 1–2 minutes per side, just until pink and cooked through. Transfer to a plate. 4. Reduce the heat to medium. Melt the butter in the same skillet, then add the onion and cook for 3–4 minutes, until softened. Stir in the garlic and cook for 30 seconds, until fragrant. 5. Add the tomato paste, sun-dried tomatoes, Italian seasoning, smoked paprika, salt, and dried basil. Cook for 1–2 minutes, stirring frequently. 6. Sprinkle the flour over the mixture and stir well. Cook for 1 minute to remove the raw flour taste. 7. Gradually whisk in the vegetable broth until smooth. Bring to a gentle simmer, then stir in the heavy cream. 8. Add the spinach and cook until wilted. Stir in the Parmesan cheese until melted and the sauce is smooth. 9. Return the shrimp to the skillet and add the cooked pasta. Toss until everything is evenly coated. If the sauce is too thick, stir in a splash of the reserved pasta water until it reaches your desired consistency. 10.
