Ingredients: Muffin Batter: 4 large eggs 1/3 cup olive oil, avocado oil, or unsalted butter 1/3 cup plain full-fat Greek yogurt 1 1/2 tsp vanilla extract 1/2 cup allulose powder 1/4 tsp stevia extract 2 cups almond flour 2 tsp baking powder A pinch of sea salt 1 1/2 tsp ground cinnamon 1/4 tsp ginger powder 1/8 tsp ground nutmeg 1/8 tsp ground cloves 1/2 cup finely grated carrots 1/4 cup chopped walnuts Cream Cheese Frosting: 4 oz cream cheese, softened 2 tbsp heavy cream 1 tsp vanilla extract 1/8 tsp stevia extract (or sweetener of choice to taste) Toppings: Chopped pecans A little extra grated carrot Instructions: 1. Preheat your oven to 350F and line a muffin tin with parchment paper. 2. In a large bowl, whisk together the eggs, olive oil, Greek yogurt, vanilla extract, and stevia until smooth. 3. Add in the almond flour, allulose powder, baking powder, sea salt, cinnamon, ginger, nutmeg, and cloves. Mix until fully incorporated. 4. Fold in the finely grated carrots and chopped walnuts. 5. Scoop the batter evenly into your muffin tin and bake at 350F for 25 minutes, or until the center is just set. Let them cool completely. 6. Make the frosting: In a small bowl, whisk the softened cream cheese, heavy cream, vanilla, and stevia until super fluffy and smooth. 7. Spread the frosting on the cooled muffins, sprinkle with chopped pecans and a little grated carrot, and enjoy!
