We have to cut sugar out of our diet a long time ago. So whenever we're craving a warm chocolate chip cookie, I make this exact recipe to satisfy our sweet tooth while keeping my husband's balanced. I start by creaming room temperature butter with allulose. Whisk it until it's nice and smooth. Then I add vanilla extract, a little stevia and a room temperature egg. Whisk it until incorporated. For the dry ingredients, I add almond flour, aluminum-free baking powder, a pinch of sea salt and just a tiny bit of xanthan gum, which is the best trick to help hold together perfectly without gluten. Once that's mixed, I fold in stevia-sweetened chocolate chips and chopped walnuts. This dough is an absolute base in our house. I use an ice cream scoop to portion them out and make sure to shape the cookies yourself since almond flour doesn't spread in the oven like regular dough. I'm going to press some chunks of dark chocolate and extra chips right on top for those delicious, melty chocolate pockets. Bake them until they're perfectly and golden and make sure to let them cool completely so they harden up. It's an amazing, comforting, healthy, delicious, riquísimo.
