If you love chocolate and peanut butter, you need my peanut butter fudge iced brownies. The brownies are not the star of the show, so any box will do, any brand. I don't care which one it is, whatever's on sale. You're going to go ahead and make it up according to the package directions. My box calls for an 8x8 pan. If you had a lot of people to feed, you could go ahead and double it and use a 9x13 pan and two boxes of brownie mix. You're going to go ahead and mix it up. Pop it in the oven and cook it according to the package directions. Before you put it in your pan, you are going to want to line your pan with parchment paper. It just makes it easier to get them out of the pan later after they're cooked. So I just cut two strips of parchment paper the width of the pan. Place it in there and pop them in the oven. Now let's make our fudge. 1 and 1/2 cups of sugar in a heavy saucepan on medium heat. 7 tablespoons of milk, 2 tablespoons of shortening, 1/4 teaspoon of salt. Mix it up. It's going to start to melt and come together. This is good. Then you can see it start bubbling on the edges. As soon as it boils and looks like this, you're going to set your timer for two minutes. Do not stir it. Stop stirring at this point. You're going to watch it go for two minutes. Do not walk away, it will boil over sometimes. You've got to watch your heat. If it gets close to boiling over too much, you just turn the heat down. As soon as it looks like that after two minutes, turn the heat off. And we're going to add a half a cup of creamy peanut butter and 1 teaspoon of vanilla. And you're just going to stir it to combine. This is it. You just made peanut butter fudge. It's that easy. Stir it up as you see it start to come together. The peanut butter melts into the sugar mixture. There we go. Look at how good and delicious that looks. Like it's making my mouth water. It's so good. Then we're going to pour it over our brownies. Still have them in the pan there. You're just going to pour it over evenly. Let it sit to cool on the counter for about an hour to cool before you can cut it. Don't touch it once it's cooled. See how we had the parchment paper there, so we could just lift it straight out of the pan. Later. That made it super easy. Pull your parchment back and then we're going to cut it. I did not cut it evenly. I had high hopes of doing nine squares. I started cutting it and then I realized the squares were pretty big. So I should have gone smaller. You can cut them smaller, you can cut them bigger, whatever you need. However you cut it, I promise you one thing, you're going to want more than one because they are that good. Look at how decadent that looks. The ratio of fudge to brownie in the 8x8 pan. If you double it and use two boxes of brownies and use a 9x13, look how good that looks.
