Stop trying to fix your espresso by changing everything at once. Dose, grind size, puck prep and temperature can all improve a bad shot. But change them together and you'll end up in an endless loop of bad espresso. Here's the order I use. First, 1- Keep Your Dose Consistent lock in your dose and watch the extraction time under 25 seconds. 2- Adjust the Grinder Based On Brew Time Grind finer over 30, grind coarser. Once the flow looks right, work on puck prep. 3- A Simple but Proper Puck Prep in a self levelling tamper can help reduce channelling. Then taste it. If everything looks good but the coffee is still sour, 4- Set The Temprature try a higher temperature. Too bitter? Go lower. Change one thing at a time.
