A classic espresso is usually around a 1 to 2 ratio.
so 18 grams in and about 36 grams out.
It's the middle ground, balanced, full bodied and a great starting point for most coffee beans.
But if you're using a darker roast and getting more bitterness than you want, try a ristretto. That's a shorter shot with a bit finer grind and usually around a 1 to 1 to one and a half ratio. 18 grams in and around 20 to 22 grams out, you'll get something thicker, sweeter and more concentrated.
Then there's Lungo, basically the opposite. Grind a little coarser and pull closer to a 1 to 3 ratio. That extra water increases extraction and gives you a lighter, more open cup. I especially like this with brighter, lighter roasts when a normal espresso tastes too sharp or sour.
