pov no one really taught you how to make food so you teach yourself these came out wayyy better than my first ones! enchildas rojas de pollo 8-10 guajillo chiles 2 tomato 1/2 onion 4 garlic 1 tsp oregano 1/2 tbsp chicken boullion 2 cups liquid from boiling or chicken broth/water 1. blend onion, tomatoes and chiles for 5-7 mins or until chiles are softened and onion is translucent 2. when cooled, add to blender along with 2 cups of chicken broth, water or the liquid from boiling the chiles, add in oregano and chicken boullion and blend well 3. (optional) strain into a bowl and set aside 4. heat pan with about 2-3 tbsp of oil to medium-high (heat too low = soggy tortillas, heat too high = burnt enchiladas) 5. dip in tortilla in enchilada sauce and then into the oil 6. allow tortilla to fry on each side 1-2 mins (the edges will become slightly crispy when its time to flip) you may add any fillings to your enchiladas, traditionally they are filled with onion and queso fresco but i’m fat and need a bit of protein chicken 2lbs chicken breast 1 onion 4-6 garlic cloves bay leaves chicken boullion 4 cups water bring ingredients to a low simmer for about 25-30 mins shred chicken and add to a pan with about 1 tbsp of oil and your desired amount sliced onions, saute for a couple mins then add in about 1/2 cup of enchilada sauce and stir until fully combined #enchiladas #enchiladasrojas #mexicanfood #comidamexicana #mexicanrecipes
