Welcome to part 2 of my summer hosting series. This is all the prep that I did the day before the event to get ahead of myself. Let's go. I started it all first by making the chicken filling for the cold chicken wraps. And also made sponges for my mini cakes. I usually do make these from scratch, but this time I just couldn't bother. And I used Sainsbury's sponge mix. That's absolutely fine. You don't have to make everything from scratch every single time. While they were baking, I went ahead and got started with the buttercream. Just a little tip guys, cover your stand mixer with cling film. Honestly, it stops that icing from going everywhere. You'll thank me later. Anyway, once the sponges had cooled, I then went ahead, cut them into little circles and then assembled them. I filled them with buttercream and jam, and then I topped them with freeze dried raspberries and some dehydrated oranges. That was all the food prep that I could physically do because majority of the things had to be made fresh on the day. I then went ahead and set up my island with all the decor, the glasses, the trays. I've also got some wooden slices and some wicker baskets. I've also got some plinths and some floral arrangements. This took me a while so I'd prefer to do this the day before rather than on the day. And we're all set up for the event day.
