hainese chicken rice in a rice cooker is one of the dishes i always come back to because it's actually fool-proof. I’m Jasmine, a Korean-American mom of 2 & this is my series, lazy girl dinners where i make easy asian-inspired meals the whole family will actually enjoy!! lazy girl dinners, ep 18: hainanese chicken rice (rice cooker) 🍗🍚 ingredients: 5 boneless chicken thighs (skin on preferred) 2 cups chicken broth 1.5 cups rice 4 cloves garlic 2 tsp minced ginger 1 stalk green onion ginger garlic scallion oil💚: 2 stalks green onions, thinly sliced ½ cup neutral oil (i used avocado) 1 tbsp minced ginger ½ tbsp minced garlic salt to taste steps: rinse rice and add to rice cooker with broth, garlic, ginger and green onion stalk (no need to chop the green onions). stir to combine. season chicken with salt, white pepper and a tiny bit of sesame oil. place chicken on top of rice, skin side up if using skin on. set rice cooker to regular cooking function and let it do its thing. when done, remove chicken and cut into 1 inch pieces. fluff rice and plate with chicken generously drizzled with the garlic ginger scallion oil and serve with fresh cucumbers! for the oil: heat oil in a pan, add ginger, garlic and green onions to a jar, pour hot oil over and add salt to taste. #lazygirldinners #hainanesechicken #ricecookermeals #easyasianfood #weeknightdinner
