I make world famous chocolate chip cookies from Paris to London to Shanghai for top judges Martha Stewart and so many celebrities. These cookies have won over thousands. And I'm gonna tell you the tips and tricks to making the perfect, thick and chewy, bakery-style chocolate chip cookies. It's not about complicated, it's actually about simplicity and quality of ingredients. It's also a little bit about understanding the way ingredients work in your chocolate chip cookie. What makes them chewy, what makes them crispy. So let's get into it. No. 1, European style butter is non-negotiable. You don't have to brown it, you don't have to do any heavy lifting. You wanna use soft, room temperature European butter for a really thick cookie. When you melt butter or you use melted brown butter, you will always get a thinner, crispier cookie, always and forever. Now, I also created a kit with the exact ingredients because I use the same ones in my world famous cookie recipe. And in this kit, for the chewy, chewy texture is two-thirds light brown sugar, one-third granulated sugar. Granulated sugar is gonna make that cookie nice and crispy around the edges. And the brown sugar, light brown sugar, because dark brown sugar gets too dark when it's baked. So light brown sugar is gonna make that cookie really nice and chewy. The absolute magic ingredient, and listen up here, to the perfect texture of your cookie is cornstarch. So for every cup of flour, you want to add in 20 grams of cornstarch plus your baking soda as your dry ingredient mix. The cornstarch is pure magic. I can't even explain to you in this short video how important it is to create a really nice, thicker and chewier cookie. We combine all of these ingredients in the kit, mixed up for you. If you're making it at home, make sure you mix up the cornstarch and the baking soda separately before adding it into your cookie dough mix. Next, it is chocolate chip cookie. So spend the money on good chocolate. We use Ghirardelli. I love them for like price point quality wise. I think they're really great combination again to hit all those notes, a little bitter, more sweet. A combination of dark brown, sorry, dark chocolate chips and milk chocolate chips. Dark chocolate is considered dark after about 60 to 65% minimum. Kind of look, bitter sweet is not the same as dark chocolate. In this recipe, another tip that I highly recommend is when your recipe calls for two whole eggs, get rid of one of those egg whites and just use one whole egg plus a yolk. Because again, the egg white is gonna make those cookies crispier and drier, and the yolk is gonna keep them fattier and chewier again, softer for longer.
