Autumn is here 🍂 🎃 These apple puff pastry pumpkins are basically autumn in one bite 🍎🎃🥐 — crispy, buttery pastry with creamy filling and thin caramelized apple slices. Ingredients: 1 sheet puff pastry, thawed 2–3 apples, preferably red-skinned 100 g cream cheese 2 tbsp powdered sugar 1 tsp vanilla extract 1 egg, beaten, for brushing 1–2 tbsp apricot jam or honey, optional Powdered sugar, for finishing How to make them: 1. Prepare the cream: Mix the cream cheese, powdered sugar and vanilla until smooth and creamy. 2. Cut the pastry: Roll out the puff pastry and use an apple-shaped cookie cutter to cut the pastry. Then use a smaller round cutter to make a circular inner indentation in the center — don’t cut all the way through. 3. Prepare the apples: Cut the apples into very thin slices, keeping the red peel on. 4. Fill: Pipe the cream cheese mixture into the circular center of each pastry, keeping it inside the inner border. 5. Create the pumpkin: Arrange the thin apple slices vertically on top of the cream, slightly overlapping each other. Start in the center and work outward until they form a rounded, pumpkin-like dome. 6. Brush & bake: Brush the exposed puff pastry with beaten egg. Bake at 190°C / 375°F for about 18–22 minutes, or until the pastry is puffed and golden and the apples are tender. 7.
