Stuffed Biscoff Cookies 🍂🍪🧸 Ingredients 100g unsalted butter (½ cup), softened 70g light brown sugar (⅓ cup) 40g caster sugar (3 tbsp + 1 tsp) 50g Biscoff spread (3 tbsp) 1 medium egg 1 tsp vanilla extract (1 tsp) 180g plain flour (1½ cups) 2g baking powder (½ tsp) 2g baking soda (½ tsp) 1.5g salt (¼ tsp) 70g Biscoff biscuits, crushed (¾ cup) 60g white chocolate chunks (½ cup) 30g milk chocolate chips/chunks (2 tbsp) or to your heart’s content 1 tsp biscoff cookie butter frozen in 8 portions METHOD Spoon the Biscoff spread into 8 small portions and freeze until firm. In one bowl, cream together the butter and sugars until smooth and creamy. Add the Biscoff spread, egg and vanilla, then mix until fully combined. Add the dry ingredients and mix until a soft dough forms. Don’t overmix. Fold through the crushed Biscoff biscuits and chocolate. Portion the dough into 8 equal portions and freeze for 15–20 minutes to firm up. Flatten each portion, place a frozen Biscoff centre in the middle, then fold the dough around it and seal completely. Roll into balls and Place on a lined baking tray with space between each cookie. Bake at 175°C fan for 10–12 minutes,until the edges are golden and the centres are still soft.
