this is your sign to stop buying coffee cake and make this instead 🍪🤎 Cookie dough: ½ cup unsalted butter (browned) ½ cup brown sugar ⅓ cup granulated sugar 1 large egg yolk (room temperature) 1 teaspoon vanilla extract ⅓ cup pumpkin puree 1 ⅓ cups all purpose flour 1 teaspoon pumpkin pie spice ½ teaspoon baking soda ¼ teaspoon baking powder ½ teaspoon salt Streusel: ⅓ cup all purpose flour ¼ cup brown sugar ½ teaspoon pumpkin pie spice pinch of salt 3 tablespoon unsalted butter (softened) Icing: 1 cup powdered sugar 1 tablespoon milk pinch of cinnamon -Melt the butter in a saucepan over medium heat. Stir or swirl often as it bubbles and foams. Continue cooking until golden-brown specks form and it smells nutty. Remove from heat and let cool for about 15-20 minutes, should be warm. -Add the brown sugar and granulated sugar and whisk to combine. -Add the egg yolk and vanilla and whisk until smooth and glossy. Mix in the pumpkin puree. -In a separate bowl, whisk together the flour, pumpkin spice, baking soda, baking powder, and salt. -Add the dry ingredients to the wet ingredients and gently fold until just combined. Cover and chill in the refrigerator for 30 minutes. -Preheat the oven to 350°F and line two baking sheets with parchment paper. -For the streusel, mix the flour, brown sugar, pumpkin spice, and salt. Add the softened butter and mix until crumbly and clumpy (I made a double batch because I love streusel!) -Scoop the dough into 12-14 equal portions and roll into balls. Place them about 3 inches apart on the baking sheets. -Use the back of a floured teaspoon to make a small well in the center of each cookie. Gently widen the well with your fingers, then fill with streusel. -Bake for 9–11 minutes, until the edges are lightly browned and the centers look puffed and slightly cracked. -Let the cookies cool on the baking sheet completely before transferring to a wire rack. -For the icing, whisk the icing ingredients together until smooth and thick but pourable.
