Looking for a moist (aka ‘nat’) carrot cake recipe? Then this is the one for you. This recipe delivers and more. Carrot cake ingredients * 2 cups sugar * 1.5 cups oil * 4 large eggs * 1 tbsp cinnamon * 2 tsp bicarb * 1 tsp salt * 1/2 tsp ginger * 1/4 tsp nutmeg * 1/4 tsp cloves * 2 cups flour * 3 cups finely grated carrots * 3/4 cup diced pecans, toasted * 1/2 cup crushed pineapple (I used fresh and just chopped it up finely) Cream cheese topping: * Tub cream cheese, * 1/2 cup butter, room temperature * 1 1/2 cups icing sugar * 1 tsp vanilla extract * 1 tsp cinnamon Method: Preheat the oven to 180 degrees. 1. Line a baking tray with baking paper. 2. Whisk together the sugar, oil, eggs, bicarb, salt and spices. 3. Stir in the flour, then fold in the carrots, nuts and pineapple. Pour batter into the prepared pan. 4. Bake for 28-33 minutes, using a toothpick or skewer to test for doneness (skewer should be clean or with a few moist crumbs). Let cake cool completely in pan. 5. Cream the cream cheese and butter together just until smooth (don’t overwhip or the mixture can become too soft). Gradually add the sugar 1/2 cup at a time, beating until just incorporated. Beat in the cinnamon and vanilla, then beat on medium high for 1-2 minutes, or until pale and fluffy. If you prefer a stiffer, sweeter topping add more icing but I did half the sugar because I like the icing not too sweet or too thick. To assemble: 1. Cut the cooled cake in half lengthwise, for 2 equal pieces of cake. 2. Layer with cream cheese topping, then an even layer of pecans. Repeat with the remaining layer of cake, filling in any drooping edges with extra nuts. I tend to leave the sides unfrosted for a rustic look, but feel free to frost the sides if you wish! #carrotcake #sheetcake #moistcake
