Cinnamon roll cake series 🤎 Ep 1: apple pie 🍎🥧 We’re taking this series all the way to the end of the year! ✨ Recipe will always be included! I doubled the recipe so I can have a small batch of cinnamon rolls as well! Dough: ½ cup tsp whole milk (warm) 3 tbsp granulated sugar 1⅛ tsp active dry yeast 1 large egg ¼ tsp kosher salt 2¼ cups all-purpose flour 3½ tbsp unsalted butter (room temperature) Apple Pie Filling: 2 medium apples (peeled, cored & finely diced) 1 tbsp unsalted butter 3 tbsp granulated sugar ¼ tsp cinnamon or apple pie spice ⅛ tsp kosher salt 1½ tsp cornstarch Toasted Pecans: ½ cup pecan halves Brown Sugar Cinnamon Filling: 6 tbsp unsalted butter ¾ cup brown sugar 1 tbsp cinnamon Pinch of kosher salt Cream Cheese Frosting: 4 tbsp unsalted butter 4 oz cream cheese 1 cup powdered sugar 1 tbsp heavy cream ¼ tsp kosher salt Dough: -Place the warm milk, sugar, and yeast in a medium bowl. Stir to combine and let sit for 10–15 minutes, or until foamy. -In the bowl of a stand mixer fitted with the dough hook or large bowl, add the flour and salt. Mix to combine. -Add the yeast mixture and egg. Mix on low for 2–3 minutes, then increase to medium and mix for another 5 minutes. -Add the softened butter a little at a time, allowing each addition to fully incorporate before adding more. Continue mixing for 7–10 minutes, until the dough is smooth, soft, and elastic. -Place the dough in a lightly greased bowl. Cover and let is rise in a warm spot for 1 hour or until doubled. Apple pie filling: -Melt the butter in a skillet over medium heat. Add the diced apples, sugar, cinnamon, and salt. -Cook, stirring often, for 3–5 minutes, or until the apples begin to soften. -Add the cornstarch and stir well to combine. Continue cooking until the mixture thickens and the apples are coated. -Transfer to a container and allow it to completely cool. -Preheat the oven to 350°F. -Place the pecans on a small parchment-lined baking sheet and toast for about 10 minutes, shaking the pan occasionally, until lightly browned and fragrant. -Let cool, then roughly chop. Set aside. Brown sugar cinnamon filling: -In a small bowl, add the softened butter, brown sugar, cinnamon, and salt. Mix until smooth and well combined. Assembly: -Grease a 9-inch springform pan and/or line the bottom with parchment paper. -Turn dough out onto a lightly floured surface and roll it into a rectangle approximately 12 x 16 inches. -Spread the brown sugar cinnamon filling evenly over the dough. -Spoon the cooled apple pie filling over the cinnamon mixture and spread evenly. -Sprinkle the chopped toasted pecans over the apples. -Using a sharp knife or pizza cutter, cut the filled dough into long strips. -Starting with one strip, roll it up tightly into a spiral. Take the next strip and continue rolling it around the first, connecting the strips as you go. Continue with the remaining strips, one at a time, until you have one large cinnamon roll. -Carefully place the finished cinnamon roll into the prepared 9-inch springform pan. -Lightly cover with plastic wrap and let rise for 45–60 minutes, or until puffy and a gentle indentation remains when lightly pressed. -Meanwhile, preheat the oven to 350°F. -Bake for approximately 30–40 minutes, or until deeply golden brown and the center is fully baked. If the top begins browning too quickly, loosely cover with foil for the remainder of baking. -Remove from the oven and let cool in the pan for about 15 minutes before frosting. Cream cheese frosting: -In a a large bowl, beat the butter and cream cheese together until smooth. -Add the powdered sugar, heavy cream, and salt. Whip until light and fluffy. -Spread over the cinnamon roll cake while it is still slightly warm. -Store leftovers in an airtight container. Rewarm individual slices in the microwave before serving. Enjoy!! #cinnamonroll #cake #fallbaking #cozyseason #bakinggirl
