Vegetable Fried Quinoa ❤️ So easy and so good 😊 Ingredients • 1½ cups cooked quinoa, cooled or day old • ½ onion, diced • 3 4 garlic cloves, thinly sliced (5–6 if you love garlic 🧄) • 1 cup snow peas • 1 cup dinosaur kale, chopped • 1 cup red bell pepper, chopped • ¼ cup coconut aminos • Sesame Oil • Salt, to taste For the quinoa: I cooked my quinoa with salt and garlic. Once cooked, I drizzled it with a little garlic infused oil for extra flavor. This is completely optional, but adds extra flavor ❤️ Directions 1. Heat a wok or large skillet over medium high heat with a little oil. Add the diced onion and sliced garlic and sauté until fragrant. 2. Add the snow peas and cook briefly, keeping them slightly crisp. 3. Add the chopped kale, followed by the red bell pepper. Stir fry until the vegetables are just tender but still vibrant. 4. Add the cooled quinoa and toss everything together. Let the quinoa cook in the hot wok for a few minutes so it can warm through and lightly toast. 5. Pour in the coconut aminos and toss well until the quinoa and vegetables are evenly coated. 6.
