Let's see how real authentic fettuccine Alfredo in Italy is made. Parmigiano Reggiano, sixty months, butter, fresh pasta, and cooking water. That's it. There's no cream, no mushroom, no shrimps, no peas, please. And the name Alfredo comes from my great-grandfather, Alfredo di Lelio, who invented, created the famous dish fettuccine Alfredo in 1908. His wife, Ines, was pregnant. He decided to cook a dish that was very, very, very, very, very nutrient. Our family carries on our family tradition with my great-grandfather, then my grandfather, then my uncle, and today with my mother and me. Many people think that fettuccine all'Alfredo was born in America. But no, it was born here in Rome, and my grandfather was from Trastevere, which is the most Roman neighborhood that exists.
