When I found these huge jacket potatoes, I knew exactly what I was going to make with them. Roast dinner loaded jacket potatoes. And yeah, they're literally the size of my head. And the portion size was huge. But for a Sunday, what more could you want for a comforting meal? So, first step, potatoes. I put them in the microwave for 25 minutes. And then I got started on my carrots. Honey roasted, of course. I just chopped them up and added them to my oven dish with some oil, salt, pepper, and honey. And they went in the oven on 190. I was today years old when I realized there was green cauliflower. Yeah, I also found this at the fruit and veg stall where I got my huge potatoes. So, obviously, I had to make some cauliflower cheese. I chopped up my cauliflower, added it to a pan with some boiling water and salt. My potatoes were also done in the microwave by this point. So, I put them in my air fryer tray with some oil, salt, and pepper. And I put them in for 25 minutes on 200 degrees. Okay, back to the cauliflower cheese. I added butter and flour into a pan, gave it a good stir, then I added in some milk. Kept stirring it, added in some cream cheese, a bit more milk, until it's like quite a thick consistency, but not too thick. My cauliflower was boiled, so I added that in, gave it a good stir. Then I added it to my oven dish, added some cheese on top. That was mine at the back with the dairy-free cheese. Pop that in the oven. I also roasted a chicken. Just literally just the chicken in the bag because I'm lazy. So, once it was ready to do so, I basted it. Now for the stuffing. Using this apple and rosemary one, it's so good. Just mix some boiling water and butter with it. Yeah, I'm just putting it in an air fryer tray because I run out of dishes for the oven. Gave my carrots a flip over and then they went back in the oven. Also fried off some onions at this point for my onion gravy. When the chicken was done, worst part, shredding it. But look how juicy that looks. Obviously, we're using the chicken juices for the gravy. Added in my caramelized onions, added some gravy granules, boiling water, and we're done. Look at them jacket potatoes. Are you actually joking me? They were so crispy and soft on the inside. Obviously, I added loads of butter, salt, and pepper. This is my cauliflower cheese all done. I went on with that next. Then the stuffing. Added my honey roasted carrots, and then I topped with the roast chicken. Finally, my nice and thick onion gravy to go on top. And honestly, this was literally my dream meal. It was so good. You have got to try this.
