Replying to @Avery | Psychic + Podcast Host One-Pan Peanut Chicken & Rice Bake 🥜🍚 You guys went CRAZY for my chicken curry bake, but so many of you asked for a version without curry! So here she is 👏🏼 Another ridiculously easy Trader Joe's dinner that practically makes itself. One pan, minimal prep, and barely any dishes! Ingredients: * 1–1.5 lbs boneless, skinless chicken thighs * 1½ cups uncooked jasmine rice * 1 (13.5 oz) can coconut milk * 1 cup chicken broth * 1 (8 oz) jar Trader Joe's Thai Peanut Satay Sauce * 1 red bell pepper, thinly sliced * 2–3 cups broccoli florets * ½ tsp salt * ½ tsp garlic powder * ¼ tsp black pepper * Sliced green onions, for serving * Optional: Trader Joe's Sriracha Sauce Directions: 1. Preheat oven to 400°F and grease a 9×13 baking dish. 2. Add coconut milk, chicken broth, and the entire jar of peanut sauce to the baking dish. Whisk until smooth. 3. Stir in the uncooked jasmine rice and sliced red bell pepper. 4. Season both sides of the chicken thighs with salt, garlic powder, and black pepper. Nestle chicken into the rice mixture. 5. Cover tightly with foil and bake for 30–35 minutes. 6. Remove from the oven, add broccoli florets, cover tightly again, and bake for another 10–15 minutes, or until the rice is tender, broccoli is cooked through, and chicken reaches an internal temperature of 165°F. 7. Top with sliced green onions and enjoy! 🌶️ A little note: This is a very mild, family-friendly dish! If you like a little kick, I HIGHLY recommend grabbing a bottle of Trader Joe's Sriracha and adding a drizzle at the end. SO good! Save this for a night you don't feel like cooking! And follow along for more insanely easy dinners! 🤍 #traderj#traderjoesrecipesa#easytraderjoesmealsd#onepandinneri#easychickendinnerideas
