I prep several things every Sunday, so the rest of the week takes zero effort. Here's what I made this week weekly food prep 7 recipes to get you through the week. First up, a hot pickle chicken salad. I made a dill pickle chicken salad a few months ago, and you guys went crazy for it, so I wanted to do a hot pickle version. We're adding in hot pickle brine into the dressing and folding in pepperoncinis for a little extra kick. Next up, I made mini quiches. These ones have caramelized onions, gruyere, beef bacon, and chives. Now, the caramelized onions do take a little bit of time, but honestly, that's the hardest part. Once those are done, everything else comes together really fast, and you have the most perfect little breakfast waiting for you in the fridge all week. Just pop them in the oven or microwave, and breakfast is ready. And after that, I made a carrot ribbon salad with a chili crunch dressing. It's just carrot shaved into long ribbons with scallions, sesame seeds, and the dressing poured over top. Just give it a good toss, and that's it. Speaking of salads, I also did a charred zucchini and corn salad with a lemon and herb dressing. I wanted to make something really summery using seasonal vegetables, and this was exactly that. It's fresh, it's light, and the perfect side dish to have in the fridge all week. After that, I made a green juice with cucumber, snap peas, celery, lemon, and green apple. I had most of these leftover from last week's prep, so it was the perfect way to use everything up before it went bad. And speaking of using things up, I made an Italian salsa verde with parsley that was on its last leg. It's one of those recipes where everything you need is already in your fridge and pantry. Spoon it over grilled protein, roasted vegetables, eggs. It makes everything better, and it takes like five minutes to make. And finally, for my sweet treat this week, I made strawberry sorbet. If you saw last week's prep, my husband got through about half the peach sorbet the same day I made it, and put in an immediate request for a new flavour. So here we are. And that's it for this week.
